Vietnam is the largest producer of groundnut kernels in Asia. The Vietnamese government has established main growing regions in Phu Tho, Nghe An, Da Nang and Binh Duong provinces. Peanuts grown in the centre and the south of Vietnam look good at first glance but peanuts from the north are preferred due to their quality. Groundnut trees are grown all over the country, but mainly in the Northern delta provinces such as Nghe An, Ha Tinh, Ninh Binh, Phu Tho…The annual output is approximately 100.000 MT.

There are two main harvests per year: groundnut kernels are harvested in Southern provinces from March to May. Almost all the harvested groundnut kernels are grade 2 (small size). Then from June to September, the farmers living in the Northern area of Vietnam harvest the groundnut kernels. The quality of the groundnut kernels harvested in the north are preferred due to their size (grade 1 and upper grades) as well as their quality. Vietnam usually exports this product to other Southeast Asian countries (Indonesia, Philippines, Malaysia…) because of the short geographical distance separating these countries. The other reason is because raw groundnut kernels cannot be stored for a long time.

Groundnut kernels are particularly difficult to store safely in good conditions for a long time because nuts get damaged and rotten very quickly.

Factors that may cause damage to groundnut kernels:

 
- High moisture when packed.
- The number of imperfect seeds is higher than allowed.
- Delivery in bad weather conditions (rain).
- Shipping containers are not adequate (dry containers instead of refrigerator containers in order to reduce costs).
- Keep seeds for longer periods than the storage conditions permit...

Applications:
 
- Whole - added at the last minute so that they remain crunchy.
- Crushed - usually roasted in a pan and then crushed to add to soup.
- In paste - usually roasted in a pan, crushed and reduced to a paste with some water and then brushed onto pieces of meat.
- In sauce; as peanut butter - used as an ingredient in Asian sauces.
- In oil - can be high heated without its properties being altered.

- Carbohydrates: 11 to 27 g.
- Fats: 41 to 52 g.
- Proteins: 21 to 30 g.
- Rich in calcium (550-600 mg), niacin, potassium, phosphorus, magnesium, vitamin E.

- 'Split' means the separated half of a peanut kernel.
- 'Broken' means that more than one-fourth of the peanut kernel is broken off.
- 'Foreign material' means pieces or loose particles of any substance other than peanut kernels or skins.
- 'Unshelled' means a peanut kernel with part or all of the hull (shell) attached.
- 'Minor defects' means that the peanut kernel is not damaged but is affected by one or more of the following:
(a) Skin discoloration which is dark brown, dark gray, dark blue or black and covers more than one-fourth of the surface;
(b) Flesh discoloration which is darker than a light yellow color or consists of more than a slight yellow pitting of the flesh;
(c) Sprout extending more than one-eighth of an inch from the tip of the kernel; and,
(d) Dirt when the surface of the kernel is distinctly dirty, and its appearance is materially affected.

- 'Damage' means that the peanut kernel is affected by one or more of the following:
(a) Rancidity or decay;
(b) Mold;
(c) Insects, worm cuts, web or frass;
(d) Freezing injury causing hard, translucent or discolored flesh; and,
(e) Dirt when the surface of the kernel is heavily smeared, thickly flecked or coated with dirt, seriously affecting its appearance.
